That sounds like graphics drivers that don't support OpenGL (the graphics format we use) properly, or some of the features you have turned on. Firstly, try turning off the extra features under the Advanced Video, Details and Eye Candy tabs in the Options. Secondly, try turning on Poor man. Thirdly, check what drivers you have installed. If they are the Microsoft default drivers, check if your video card manufacturer has Vista drivers for your card.
