They are currently impossible to implement with the current software. I'm sure the dev team already have a long list of mythical creatures they will implement, because this has all been suggested before. Have patience. But OTL, you are right in saying that the current selection of monsters is getting boring. I'm certain the dev team are working their asses off. They will get around to it eventually.
